4.30.2011

Today we went to the Cornell Lacrosse game. We had a great time AND it was a great game. Cornell 9. Princeton 7.


We ran into our good friends there and went to sit by them. T had a great time watching the game with his buddy, Graham.


Also, check out the grass we planted on Easter! We've had so much fun watching it grow. Thanks for the fun project Grandma Robyn!!

We are so lucky! Today we met Dad for lunch! We love seeing him in the middle of the day!






We had such a blast at lunch we decided to even go to our favorite ice cream shop for desert! Yummmm! (I even tricked T into being in a couple pictures....he totally hates it right now and WON'T smile for the camera. A real bummer because he's so stinking cute.)




I'm convinced that it's much easier to be a mom when the weather is nice. My kids are just happier, and so am I. I'm so excited that spring is finally here!

We played outside all day today. I loved it. The kids loved it. We're hoping the nice weather decides to stick around this time!! It finally felt like Spring.

My friend Jessica made a "book of faces" & I thought it was such a cute idea, I made something similar to hers and stuck it in T's Easter basket. He loves looking at all the pictures, pointing to them & telling me who it is.


I brought it to church on Sunday and he stayed busy for a long time looking at it. It was great! Thanks for the idea Jess.

Last night as I was putting T to bed, I was telling him that the Easter Bunny was going to come and leave him a surprise while he slept. I thought he'd be excited, but I guess I shouldn't have told him anything because he was terrified and my usually easy to put to bed kid kept getting out of his bed saying (very seriously) "mom. I don't want the Easter Bunny to come tonight." ha ha. I told him that he might leave jelly beans (T's favorite) and that he wouldn't actually see the Easter Bunny he just sneaks in and leaves good kids treats and hides our eggs. ha. He finally was on board, but in the middle of the night he came into our room and said, "mom? Did you see the Easter Bunny? I wanna hold you!" (He says 'I wanna hold you' when he wants me to pick him up) And he came in bed with us. ha. Funny kid.

So, when I was a kid, the Easter Bunny left a trail of string for each kid that led them to their Easter basket. The Easter bunny continued the tradition on this year with T and he had to follow his string to his basket.


Found!!


The Easter Bunny had to hide our eggs inside this year because it's so cold outside. T was way into finding the eggs this year. It was great. The first egg he threw in his basket and had a melt down that it cracked, "oh no! Broke!! Ahhhhhhhhhhhh!!" so after that he was gentle putting each egg in. ha.

All the nursery kids (& their parents) sang in Sacrament Meeting today. It was totally adorable. I wish I had it on a video. But I snapped a picture of T later in nursery. He loves singing time so much. ha ha. I love that all the other kids are off playing and T is just right there, loving the popcorn song. ha.


We had our good friends over for dinner & Kehau set up another Easter Egg hunt for the boys. This one was even better then this morning because the eggs actually had candy in them! ha. T cried when his buddy had to go home.

We had fun dying Easter Eggs today!




After we dyed eggs, we planted some grass that Grandma Robyn sent to T in his Easter Basket. (We can't WAIT for the grass to start growing! Thanks Grandma!)


Today we also watched our good friends daughter while they were in the hospital having their 2nd baby! It was fun to have her over. Her & T are little twins, born just 5 days apart. These two love each other. They both cried and cried when Madeline had to leave. (CONGRATULATIONS Lauren & Stu!!) It looks like T isn't happy in this picture, but really he's just saying "CHEESE!!"


Madeline got some good practice at being a big sister. She's going to be great!


Lastly, my little babes turned 6 months old today! I can't believe my baby is a whole half year old! Here she is, chewing on a frozen bagel...one of her favorite things :)

Now that Maizie is a little older, it's really cute to watch T start to play with her. I love when they play so much! They were playing so cute today, I grabbed my video camera and recorded them. I'm having technical difficulties uploading the video but here's a picture.


Maizie had just grabbed at the green Easter tin, and all of T's plastic eggs fell out and he came over and said, "oh no! It's okay Maizie girl, don't worry. No biggie. I got them." ha ha ha. I love it. Then he gave her his stuffed toy Tyrone from the backyardigans and said, "Here Maizie girl, you want to play with my friend Tyrone?" (Maizie grabbed Tyrone) and he goes, "She likes him!"

Ha. Who needs a video, right?

A few days ago I wrote about how we made our own Cafe Rio pork. I few people asked for the recipe I used so here you go: (sorry about the "abouts"...ha ha. I never measure anything, I just guess. It always tastes about the same.)

PORK
about 2 lbs pork
about 3 cans coke (my recipe says not to use diet, but I have before. Just add a little more sugar!)
about 1 1/2 C brown sugar
dash of garlic salt
1 can sliced green chilies
can enchilada sauce
another cup of brown sugar

Put pork in heavy duty bag with 1 1/2 cans of coke & about 1/4 C brown sugar & marinade overnight.(ha. I never do that! But that's what my recipe says to do)
Drain marinade and put pork, about 3/4 can of coke, water and garlic salt in crock pot on low until it shreds easily-about 3 hrs? depending on your crock pot. DON'T LET IT GET TOO DRY! ) Remove pork from crock pot and drain any liquid left in the pot. Shred pork.
In a blender, blend a can of coke, chilies, enchilada sauce & 1 C brown sugar. Use your judgement with the consistency-if it's too think add more coke. If it seems too thin add some sugar. Put pork and blended mixture back in the crock pot and cook on low for a couple more hours. THat's all I do. It's super easy.

DRESSING
1 packet traditional hidden valley ranch mix
1 C mayo (I use light because that's what we have and it's still good)
1 C buttermilk
2 tomatillos, remove husk, diced
about 1/2 bunch of cilantro
1 clove garlic (I just use minced because it's easier)
juice from 1 lime
1 jalapeno (I remove seeds, if you want it spicier keep the seeds..I don't know how spicy it gets, I've never kept them in :) )

Mix all ingredients together in the blender, that's it! Taste it, sometimes I add a little more lime or a little more cilantro.

We just use brown rice & a can of black or pinto beans. I don't do anything special with the rice or beans.

Sam usually uses the ingredients to make a burrito, I prefer a salad. You can basically make whatever you want.

Course we went to my favorite restaurant, Ithaca Bakery. I will miss it and the "Lindsey Sandwich" so much when we move :(

This little girl is getting so big!!

I love getting my kids ready for church on Sunday. I generally take a picture of them every week dressed up just because I think they look so darn cute.


After church today we decorated Easter Egg cookies.




Lastly, I'm so excited that we found a great home to rent in Ohio.

I think the thing I'm most excited to have in our new place is a washer/dryer. We'll miss a lot of things about living in Ithaca (our great friends mostly) but we will surely not miss our weekly trips to the laundromat.

Spring is just around the corner. I can feel it! It's still a bit breezy outside but at least we can go out now. There's a park just down the street from our house. We can literally walk there in 5 minutes. I love it. A rock wall surrounds the park and it's just the perfect size for toddlers to jump up and run around it (really...sometimes I wonder if they even ask a mother's opinion before designing parks! It's so dangerous!) It doesn't scare me like it scares other moms though because T is so careful!! He really wants to run like the other kids but he won't do it. He goes, "I need help mom! I need heeeeeeeelp!!!" HA. I love it. He'll only walk on the rocks if he's holding my hand. I love my little careful boy.


...and this little girl is too cute! I can't believe she'll be 6 months old next week!! WHAT?!




Sam is the worlds best gift giver. Really. He's never gotten me a gift that I don't absolutely love. He gave me these shoes for my birthday and I can't get enough of them. I wear them everywhere. Aren't they great?? (T and Tyrone are ready to catch me at the end of the slide. ha.)

All better!!




We took the kids to the Dr. yesterday for T's post pneumonia/ear infection check and Maize's wicked cough. Sam snapped these pictures from his phone. I was so proud of T. He usually gets scared and cries the whole time at the Dr. NOT TODAY!! He was happy as could be. Saying "thank you Dr!" the whole time. ha ha. I love this kid.
(Maizie just has a cold. Her cough is already getting better. yay.)
